Vegan Recipes: SANDWICHES

SUPER VEGGIE AND HUMMUS SANDWICH


Hummus
Vegan Mayonnaise
Tomato, Sliced
Cucumber, Sliced
Lettuce
Sprouts
Avocado, mashed
Onion, sliced
Spike Seasonings
2 Slices of Crusty Bread


Toast the bread. Spread the hummus on one piece of the bread and vegan mayonnaise on the other side and add mashed avocado.

Place the tomatoes on the side of bread with the hummus, then sprinkle with salt, pepper and Spike. 


Layer the onion, lettuce, cucumber and sprouts on top of the tomatoes. Place the piece of bread with the mayo and mashed avocado over the tomatoes.

GRILLED TOMATO "CREAM CHEESE" SANDWICH


2 slices hearty whole wheat bread                   
1 large summer tomato, thinly sliced
Sweet onion thinly sliced
Vegan cream cheese
Garlic/herb seasonings
Italian seasonings
Chives
Vegan margarine
Salt and pepper


Spread one side of each slice of bread with a thin layer of vegan cream cheese.

Layer the tomatoes and onion over one side, sprinkle with Italian seasonings, salt and pepper. 

Sprinkle a large amount of chives on the cream cheese side of the bread.

Close the sandwich and spread outside of bread with vegan margarine on one side. 

Sprinkle with garlic/herb seasoning, mashing seasoning into margarine with a spoon. 

Place the seasoned side of bread down in a heated skillet. Spread top piece of bread with margarine and sprinkle with seasoning.

Grill sandwich on both sides until browned.
