If you are vegan or in the process of becoming vegan, you have to try Daiya (pronounced day-yah) Shreds! They will change your life. Okay, maybe that is a bit too strong a statement, but they will definitely change your diet. Those recipes that you have gotten rid of or altered in order to become dairy-free, will find their way back into your menu rotation.

Daiya Shreds come in two flavors, cheddar and mozzarella. We tried them both in several different recipes and they both worked very well. The amazing thing about this product is the way that it melts. Real cheese melts into a gooey mess that stretches when pulled apart, which is what we loved about it. Unfortunately, soy cheeses miss out on this. But Daiya scores a 10 out of 10! It melted beautifully on everything we tried. We tested it on pizza, veggie burgers, nachos, and grilled cheese sandwiches. 

We even made macaroni and cheese that tasted just like the Shells and Cheese that we remembered as children. It was kid tested and was a big hit with the 7 year old in the house!

Also, Daiya Shreds don't take long to melt; about 5 minutes in the oven.  The only thing that you should be aware of is that the flavor seems to be milder when it’s cold. The flavor really comes out when it’s melted.

The ingredients are another great thing about this cheese substitute. It's free from most ingredients which cause allergies, such as soy, casein, lactose, gluten, egg, wheat, barley, whey, rice, and nuts. And of course, it's free of all animal products. So, what does this imitation cheese have in it? Well, the two main ingredients are filtered water and tapioca and/or arrowroot flours.

We found Daiya Shreds at our local Whole Foods Market for about $4.95 a bag. Each bag goes pretty far, except when making the macaroni and cheese recipe because it does require quite a bit of the Shreds. We definitely recommend getting your hands on this "cheese" as soon as you can!!

Not easy to locate (only large health food stores carry at the time of this writing)
